Pecan Sandies

Bechay's Pecan Sandies :)

Hubby has a sweet tooth so I make sure that he has something sweet in his lunch bag at work all the time. 

I'm getting addicted to baking so I suggested to bake his own cookies instead of buying them from the store. He asked me to look for a Pecan Sandies recipe online. I browsed allrecipesdotcom and tasteof homedotcom. All needed ingredients are available in our pantry so I decided to make some for him right away.

Pecan Sandies Recipe

You will Need:

1 cup butter-softened
1/3 cup white sugar
2 teaspoons water
2 teaspoons vanilla extract
2 cups sifted all-purpose flour
1 cup chopped pecans
3 tablespoons confectioner's sugar- optional

Instructions:

1. In a bowl, cream butter and sugar, stir in water and vanilla. Add flour until well blended. Stir in pecans; mix well. Chill for 30 minutes.

2. Roll into 1-inch ball; place on a greased baking sheet. Bake at 350 (pre-heated) for 10-15 minutes or until bottom edges are golden brown.

Cream buter and sugar.


Make sure that the butter is softened not melted.


I forgot to sift the flour. My bad. Hehehe.


I did not chop my pecans because hubby said he likes them whole.


After mixing everything, I put the dough in the refrigerator for 30 minutes. I set my kitchen timer.


I made 30 1-inch balls.

This is the indicator that the sandies are done. 


Hubby doesn't like to roll them in confectioner's sugar so I leave them as is.
