Banana Loaf Bread

My Banana bread!
It's my first time to bake something from the scratch today and I feel very proud of myself, hehehe!


When I saw these over-ripe bananas in our dining table, I thought of making something out of them then I remembered the Banana bread recipe posted by my co-blogger Cecil D. Thanks so much to her. Her recipe somehow triggered my curiosity because it has mayonnaise. Yup, you read it right.. Mayonnaise.

When I checked the other needed ingredients, I find them all in my pantry plus the instructions are very easy so I thought to give it a try.

The ingredients. You need flour, sugar and salt too.
I mixed the egg, mayonnaise and mashed banana in a bowl using an electric blender.


Then I mixed the dry ingredients like flour, sugar, baking soda, salt and pecan nuts in a separate bowl.


Next, I mixed the wet and dry mixture throughly. Then followed the rest of the instructions.

Here I posted the recipe if you want to try it. Trust me, it is very easy to make.

Oh, by the way, I am happy to post it here that finally, I've been able to use the Pyrex glass loaf dish which I got from a yard sale two years ago, hehehe! 

You will Need:

1 egg
1/2 c. mayonnaise
1 1/3 c. mashed bananas (approximately 3)
1 1/2 c. flour
1 c. brown sugar (light or dark)
1 tsp. baking soda
1 tsp. salt
2/3 c. nuts or chocolate chips (optional)- I used pecans

Instructions:

Preheat oven to 350 degrees. Beat egg and dressing and bananas in large bowl with whisk until well blended. Mix remaining ingredients in separate bowl. Add to banana mixture and stir until moistened. Pour into 9x5 greased loaf pan and bake for 40-45 minutes.

Tip: Make a tent on the bread while cooking to prevent from too much browning.

  3. sis ano po kaya nai-add ng mayo sa flavor or texture ng bread? na-curious ako bigla dito. and sa pyrex, di na need ng liner or baking spray?

  4. ^hi sis, thanks for visiting, hindi ko talaga alam kung ano ang kaibahan kasi hindi pa ako nakabake ng banana loaf bread na without mayo, newbie pa kasi ako sa baking eh. Ang friend kong Pinay din, oil daw ang gamit niya instead of mayo. Yup hindi ko nilagyan ng parchment paper ang pyrex, okey naman ang resulta, siguro okey din kung may parchment paper. Ang texture o flavor ng bread ay parang banana cake sa atin, ang sarap talaga!
